Not that important. For those dogbone motor mounts (https://www.yourmechanic.com/article/how-long-do-engine-motor-mounts-last), they can only keep it from moving back and forth a little bit. You'd want to change them eventually but my advice is to go the aftermarket or find a cheap...

In your application, the new thermostat comes with a new rubber seal which is the entire gasketing solution for the thermostat housing. Nothing should be added as that may interfere with the seal. The water pump uses a paper/fiber gasket....
