Ok, it sounds like an issue with the mass airflow sensor. I would start by cleaning it and see if there is any change. If not, then try unplugging it and see if the truck behaves differently when you start it. If it doesn't drop in idle, then you will want to replace the maf sensor.
The coolant temp sensor may be reading wrong and causing this too, but I would start with the maf, you don't need a scan tool to see what it's reading, you can just try the test.
