How would the headlights come on while in off position in the middle of the night.

Headlight Switch Replacement $125.06 - $514.72 Get a Quote

It sounds like your headlight circuit has a short to power. This will cause the system to activate without the use of the switch. The most common cause of an issue like this would be a fault in the switch itself. The switch is where the on/off setting is located. Thererfore, a short is most likely to happen at that location as it is the only location where on and off can be selected. I would recommend having your headlight switch tested by a qualified professional to determine if the switch is shorted. Then replace the headlight switch if necessary to resolve this issue.

Transmission was low. Put 4 quarts in it and everything was fine until next morning shifting to drive and felt like neutral
If the fluid was 4-5 quarts low, that's a third of the total transmission fluid capacity. The transmission has probably been running very hot because of that, causing accelerated wear to the internals (clutches, etc). Check the dipstick for the...

PS light on and engine will not start. While it is on, it's not the check engine but rather it's the power steering light.
Either the battery needs cleaned or replaced or the steering wheel lock solenoid has failed in the steering column. Look for any unusual problems with the power steering system (https://www.yourmechanic.com/services/warning-light-is-on-inspection) and if the battery has an corrosion on the terminals....
