Q: Coolant, cap, hoses replaced. When temp reach middle AC don't work properly then temp goes down.

Car had gasket head skim 2yrs ago and everything replaced. Recent overheat issues. Had coolant, cap and hoses replaced. They even unblock 2 hoses. Now when car temp goes to middle the AC will stop working properly (less air and not cold). Car temp will go down. So it doesn't really overheats. What is causing this issue? Air-con diverting to cool radiator?
