What is the Steering Rack/Gearbox all about?

Hi. Im not sure how to describe the problem im having. In overdrive crusing at 80 kmh all good but when I put the foot down its like a jerking movement from the rear of the car. The power doesnt seem to want to go to the back wheels then it picks up and settles down smooth again. Ive had the center bearing replaced on the tail shaft and the shaft was re ballanced but they didnt replace the donuts at the front or the rear.
