Your oil pressure fluctuating is most likely caused by a faulty sending unit. The sending units on 4.3 liter engine are known to fail. To be safe I would ask for help from a mechanic at YourMechanic to properly diagnose this issue to make sure it is not something more serious such as a mechanical issue with the engine.
