Q: I just did a complete rebuild on my Subaru 05 sti and put an exhaust and intake on it. I was told I shouldn't drive it too much

I just did a complete rebuild on my 05 Sti with that I put a new Invidia n1 race exhaust and K&n intake my mechanic told me not to drive it too much without the map or tune on it because I could destroy the valves is that true. The break in period is 1000 miles. Should I drive it without the tune for a 1000 miles or should I get the map in it before then. Am I at risk to ruin the valves if I drive it without a map?

My car has 140000 miles.
My car has a manual transmission.
